This recipe by Joyce Hartman is true Cozy, comfort food. Double the batch for the crew!
Ingredients –
- 1 cauliflower
- 1 whole brown onion
- 3 celery stalks
- 1 TBSP Better Than Bouillon (omit salt if using this brand)
- ¼ cup flour
- 1 cup milk
- 2 tsp parsley
- Favorite toppings (optional – bacon bits, cheese, etc
Instructions:
Rinse and remove stem/leaves from cauliflower and add to a pot and cover completely with water.
Dice up onion and celery and add to the water. Add 1 TBSP of Better Than Bullion to the pot. Make sure to cover cauliflower all the way to the top with water and bring to a boil.
In a separate bowl add ¼ cup of flour and 1 cup of milk. Mix well, strain if there are still some clumps of flour. Drain some water from the soup so it does not overflow, then add mixture to the soup. Smash all ingredients with a masher until desired tenderness and size. Add desired amount of parsley. Once fully cooked add toppings. Enjoy!
